I grew up eating grandma’s chicken stew, it was my favourite meal. As an adult it’s my favourite to make because it’s cheap, tasty, and a filling winter meal. Grandma always measured things “by gosh and by golly” so I don’t have servings for you all.
- Meat (I like to use roast chicken leftovers)
- Veggie Stock
- Carrots
- Potatoes
- Celery
- Green Onion
- Yellow Onion
- Parsley
- Lipton Noodle Soup Mix
Boil the potatoes and carrots in the veggie stock and add the rest once those are almost soft. My grandma always used veggie stock and soy sauce for flavour but I love the lipton noodle soup mix instead for flavour.
The veggies cost less than $20 (the chicken is more but I use leftovers) and a huge pot feeds Ryan and I for days.
This looks so comforting and delicious. My grandma never measured anything either, but her cooking was wonderful.
