In four weeks I’ve lost 10.5 pounds! If this last month didn’t drill into my brain how much diet has to do with your weight, I don’t know what will! I thought with my background in fitness and kinesiology that losing the baby weight would be a breeze. What I didn’t expect was for my eating to get so out of control and not having the discipline to shape up. Until I worked with Bethany at Nutritious & Delicious!
It wasn’t always the easiest, I had a Wendy’s episode one day, but with Bethany’s help and recipes I was able to reset my eating habits. My biggest reset was getting real about portion sizes.
How many of you had to stay at the table until you finished your plate? I did! Did you also have a Grandma whose feeling were hurt if you didn’t take seconds? I did! This meal plan like this helped show me how much food I actually need to feel full and fuel my body.
I can’t describe how good it felt when I tentatively pulled up my pre-pregnancy jeans and they buttoned up no problem. They say to give yourself up to a year after having a baby to strengthen your body and they were so right!


The Main Reasons I Succeeded
ACCOUNTABILITY
The reason I thrived so well this month is because I had someone I was accountable to. My meals were on the Nutritious & Delicious app and knowing that Bethany could see what I eat was major motivation to stick to the plan. And if you’re thinking “it would be easy to cheat and not put everything on the app” I’m too competitive to cheat like that on a challenge.
EASY RECIPES
The second reason I was able to stick to this plan is because the meals and snacks were super easy to make. When I did my introductory call with Bethany (you do three throughout the month) I told her it had to be easy to make stuff or I wouldn’t do it. I tried one plan and quit after a week because I was so sick of the elaborate recipes and all the time I had to put in the kitchen.
Speaking of recipes, I am OBSESSED with this special treat recipe, Heaven in a Bar. It truly is heaven! It’s so sweet and satisfying that I had to share the recipe here.
Heaven In A Bar (GF)(DF) INGREDIENTS: 58 gram(s) (Zazubean) 70% Chocolate Nutbar (VG)(GF) 0.25 1 cup Honey 0.5 1 cup Nuts, almond butter, plain, without salt added 1 1 cup, sliced Nuts, almonds 0.5 1 cup, shredded Nuts, coconut meat, dried (desiccated), sweetened, shredded 0.5 1 cup Oil, coconut 0.5 1 cup (not packed) Raisins, golden seedless 0.25 1 cup Seeds, flaxseed 2 tea spoon Vanilla extract DIRECTIONS:
Place almonds, ground flax, dried fruit, coconut, almond butter in a food processor.
Pulse briefly to combine.
In a small saucepan melt coconut oil over low heat, remove then stir in honey and vanilla.
Add coconut oil mixture to food processor and pulse until it forms a coarse paste.
Press mixture into a greased 8X8 baking glass dish.
Chill in fridge until mixture is hard and then over low heat in a double broiler melt
chocolate pieces until runny. Spread over bars and put back in fridge for 30 min.
Cut into 15 bars.
1 bar is a serving Makes 15 servings. Nutrition Information per Serving Calories: 235.14 Fat: 18.91g Carb: 15.34g Protein: 4.22g
As I’ve said before, I plan to continue eating clean to help me get as healthy as possible. The only difference is that I’ll give myself a little cheat day where I can have a treat, glass of wine, or indulgent meal.

These meals are right up my alley. They look so good. I have started changing the way I eat and I have seen 2 inches off my waist and shedding pounds. I just want to be healthy and no longer eat unhealthy. This year is going great.

Me too! I love that stuffed feeling, but my waistline doesn’t! Ha ha!
We have been eating super clean too for about 9 months now. (With the occasional cheat of course) I have seen major improvements in my children’s moods and behavior and my energy has spiked! I used to drink 3-4 cups of coffee a day and now sometimes just 1 is too much for me lol
It’s so true! If I eat a lot of junk one day, I have no energy the next day!
